About the Dish
This is a Pacific Northwest salad built around real local seafood. It starts with all-organic butter lettuce and layers in avocado, heirloom tomatoes, roasted corn, and cucumbers, all dressed in a lemon oregano dressing. The stars are the Dungeness crab and Oregon bay shrimp, two of the best things our coastline has to offer, sweet and delicate against the soft butter lettuce. The roasted corn brings a little char and sweetness, the avocado adds richness, and the lemon oregano dressing ties it together with a bright, herbal lift. It eats like a full meal, fresh and generous, and it is a favorite when the weather turns warm out on our patio.
