Our Wagyu comes from Imperial American Wagyu Beef, raised from authentic Japanese bloodlines and graded to a Signature marbling score of 8 or 9 under Japanese standards, a level of buttery, melt-in-your-mouth tenderness that USDA Prime simply cannot reach. The Poultry: Mary’s Chickens & Draper Valley Farms

We source from two of the most respected poultry families in the country. Mary’s Free-Range Chickens has been family owned since 1954 and air-chills every bird, adding no water, keeping 100% of the natural chicken flavor. Draper Valley Farms has been a Pacific Northwest institution since 1935, raising vegetarian-fed, antibiotic-free chickens processed right in Mount Vernon, Washington.

The Butcher: Cascioppo Meats & Carlton Farms

Our sausages and specialty meats come from Cascioppo Meats, a Seattle family butcher making sausage by hand since 1947. Through Cascioppo we also bring in heritage pork from Carlton Farms, a sixth-generation Oregon family raising premium pork in the Willamette Valley since 1956, the backbone of our Sparrow-Smoked Rack of Ribs.

The Pasta: Forchetta Pasta

Our fresh pasta is made by Forchetta Pasta Company, Seattle artisans who extrude through traditional bronze dies for a texture that grips every sauce. It is never dried, never warehoused. It arrives fresh and is cooked the same week it’s made.

The Dessert: Olympic Mountain Ice Cream

Our gelato and sorbet come from Olympic Mountain Ice Cream, a Washington family business handcrafting small-batch frozen desserts in Shelton since 1984. Founded by Karl and Bev Black and still run by the family, every batch is built from real Pacific Northwest fruit and herbs, with no artificial flavors and no shortcuts.
