From Sparrow’s gin list, Bombay Sapphire is a globally loved London Dry, instantly recognizable in its blue bottle ($11 by the pour, or $16.50 for a larger pour).
About Bombay Sapphire
Originally launched in the 1980s, Bombay Sapphire is named for the Star of Bombay, a one-of-a-kind 182-carat sapphire. This London Dry gin captures bright, lively flavors from ten botanicals sourced from around the world using a vapor infusion process. Rather than steeping and boiling the botanicals, the spirit vapor passes through baskets of botanicals, drawing out a fresher, more delicate expression. Today it is distilled at the Laverstoke Mill distillery in Hampshire, England, a renovated historic mill that is now one of the most recognized gin homes in the world.
Tasting Notes
The vapor infusion gives Bombay Sapphire its signature smooth, bright character. Juniper sits in balance with citrus, soft spice, and a delicate floral lift from the ten botanicals, making it light and exceptionally mixable. It is a clean, versatile gin that has become a bar standard for good reason.
What to Pair It With
Bombay Sapphire is bright and endlessly mixable. From the Sparrow dinner menu, enjoy it with Fresh Oysters, the Tuna Tartare, or a crisp salad, or build it into a classic martini, gin and tonic, or spritz. It is a happy-hour favorite in our 21+ lounge, where our daily happy hour from 3 to 5 PM takes $3 off well drinks.
