The Botanist

From Sparrow’s gin list, The Botanist is a small-batch gin from the Islay region of Scotland, distilled with 31 botanicals ($13 by the pour, or $19.50 for a larger pour).

About The Botanist

The Botanist was created in 2010 at the Bruichladdich Distillery on the Isle of Islay, better known as a Scotch whisky island. It is the first and only Islay dry gin. The recipe uses 31 botanicals: a core set of classic gin botanicals plus 22 that are hand foraged locally on Islay, gathered by foragers across the island’s hills, meadows, and shores. It is slow distilled in a rare modified Lomond still, a low-pressure, gentle process that runs far longer than a typical gin run, letting the delicate foraged oils come through. The result is a gin with a genuine sense of place.

Tasting Notes

The Botanist is layered and complex, a herbal, floral take on gin rather than a one-note juniper hit. The wealth of foraged botanicals gives it a fresh, green, almost wild character with juniper still anchoring the backbone. It is aromatic and rounded, lovely neat, on the rocks, or in a martini that lets the botanicals sing.

What to Pair It With

Bright and botanical, The Botanist is a beautiful martini gin and pairs well with fresh, briny plates. From the Sparrow dinner menu, enjoy it with Fresh Oysters, the Tuna Tartare, or the Scallops and Prosciutto. Settle in at the 21+ lounge with its quartzite bar, or out on our four-season patio.
