About Woodinville 8 Year Rye
Woodinville Whiskey Co. is one of Washington State’s flagship craft distilleries, founded in the town of Woodinville just up the road from us on the Eastside. As the menu notes, this is Woodinville’s proprietary rye left to sit for a minimum of 8 years, a rare offering that does not last long. Woodinville sources its grain from the Omlin family farm in Quincy, Washington, mashes and distills in Woodinville, then trucks the spirit over the Cascade Mountains to age in private barrel houses in Central Washington. The barrel wood is seasoned in the open air for 18 months before the barrels are deeply toasted and heavily charred, all of which the extra years in oak only amplify.
Tasting Notes
Rye brings the spice, and eight years of age rounds it out. Expect the warm baking-spice character of a well-aged rye, with notes that lean toward caramel, wood spice, and a long, layered finish. This is a rye built for slow sipping.
