These fries are all organic and fresh cut, finished with rock salt. There is nothing complicated here, just good sweet yam potatoes cut in house and seasoned simply, which is exactly how we like a shareable side at our Juanita neighborhood spot. The natural sweetness of the yam plays off the rock salt for that classic sweet-and-salty balance, and because they are cut fresh they have real character rather than coming out of a bag. They are easy to pass around the table and go with just about everything else on the menu, from a steak to a round of starters. Order them for the table and watch them disappear.
