Wagyu Sliders

From Sparrow’s dinner menu, the Wagyu Sliders are a rich, satisfying shareable built for the table, $24.

About the Dish

These sliders start with an Imperial American Wagyu beef patty on a Macrina Bakery brioche bun. We dress them with house-made chorizo aioli, cheddar, pickles, and sauteed onions, so every bite has a little richness, a little tang, and that soft brioche finish. The Wagyu patty brings a deep, beefy flavor, the cheddar melts into it, and the chorizo aioli adds a smoky, spiced edge. Pickles and sauteed onions keep things balanced, one sharp and bright, the other soft and sweet. The Macrina Bakery brioche ties it all together with a tender, slightly sweet bun. They make for one of our most popular ways to start a meal in Juanita, and they are easy to split when the table wants a taste of everything.

What to Drink With It

Wagyu beef wants a red with some structure. The DeLille D2 is a Bordeaux-style blend that stands up nicely, and the Kiona Merlot is a smooth, plush match for the chorizo aioli. The full pour list is on the Sparrow beverages menu.
