About the Dish

This is a half rack of artisan pork ribs from Oregon’s Carlton Farms, a name we trust for quality pork. We slow-smoke the ribs over mesquite, then finish them with our signature Sparrow golden glaze for a sweet, sticky lacquer over the smoky meat. It is served with mashed potatoes, making it a hearty, full plate. It is comfort food with a little craft behind it, just how we cook in Kirkland’s Juanita neighborhood. Mesquite smoke and the golden glaze together are what set this rack apart from a standard order of ribs.
