Libelula Anejo

About Libelula Anejo

Libelula (the name means dragonfly) is made from 100% Blue Weber agave grown in the Highlands of Jalisco. As the menu notes, it is produced in small batches with absolutely no additives or sweeteners, then aged for 14 months in used bourbon barrels. The brand is produced by a craft distillery on the same historic estate associated with Casa San Matias, one of the region’s long-running tequila houses, and is run by the family behind that legacy. That combination of additive-free production and patient barrel aging is what gives the anejo its rounded, mellow character.

Tasting Notes

Per the menu, this is small-batch, additive-free tequila aged 14 months in ex-bourbon barrels. That time in wood typically brings soft caramel, vanilla, and warm baking-spice notes over the cooked-agave base, with a smooth, easy finish. Because there are no additives or sweeteners, the wood and the agave do all the work, and the result is rounded without tasting heavy. Sip it neat or over a large cube and let it warm slightly.

What to Pair It With

Anejo tequila is a genuine sipping spirit. From the Sparrow dinner menu, enjoy it after the American Wagyu steaks or the Sparrow-Smoked Rack, or simply sip it neat in the 21+ lounge. The daily happy hour runs 3 to 5 PM, with $3 off well drinks.
