Lalo Blanco

From Sparrow’s tequila list, Lalo Blanco is a clean, modern blanco with serious heritage behind it ($13 by the pour, or $19.50 for a larger pour). It is one of the most food-friendly tequilas we pour.

About Lalo Blanco

Lalo Tequila was founded by Eduardo “Lalo” Gonzalez, the grandson of the legendary Don Julio Gonzalez, with his longtime friend David Carballido. The name Lalo was the nickname Eduardo’s grandfather gave him. As the menu notes, this is a Mexican-owned tequila that takes a minimalist approach to production without giving up any passion, quality, or tradition. Lalo is made from Highland agave in Jalisco and is intentionally additive-free, a deliberate choice to keep the spirit honest and let the agave speak. Rather than build a sprawling lineup, the brand has chosen to focus entirely on doing one blanco extremely well.

Tasting Notes

The menu keeps it simple, so we will too. A Highland blanco made this way, with no additives, typically leans bright and clean, showing fresh cooked-agave sweetness and a soft, approachable character. It is the kind of blanco that is easy to enjoy on its own or in a cocktail.

What to Pair It With

Blanco tequila is bright and versatile. From the Sparrow dinner menu, pair it with the Lamb Quesa-Birria Tacos, the Guajillo Chicken, or the Tuna Tartare, or enjoy it in a Margarita or our Juanita-Rita. The daily happy hour runs 3 to 5 PM, with $3 off well drinks.
