Koloa Hawaiian Dark

From Sparrow’s rum list, the Koloa Hawaiian Dark is an island pour with real craft behind it ($14 by the pour, or $21 for a larger pour). It is an easy one to settle into at our Kirkland bar.

About Koloa Hawaiian Dark

Koloa Rum Company was founded in 2009 as the first licensed rum distillery on Kauai, the Hawaiian island where the islands’ commercial sugar industry took root back in 1835. The Dark Rum is twice-distilled in a vintage copper pot still from pure Hawaiian cane sugar and rainwater filtered through the volcanic slopes of Mount Waialeale, then blended and bottled on-site in Kalaheo. It is a small-batch, single-origin Hawaiian rum, which makes it a fun thing to find on a neighborhood menu in Kirkland.

Tasting Notes

This is a dark rum in the gentle, dessert-leaning style. Look for vanilla, soft molasses, and caramel up front, with a warm baking-spice layer and a clean, smooth finish. It is rich without being heavy, the kind of pour that works on its own or stirred into something.

What to Pair It With

Dark rum loves sweet and smoky flavors. Enjoy it neat or over a large cube, or let it shine in a tiki-style cocktail. From the Sparrow menu it is a natural after the Sparrow-Smoked Rack or alongside the Truffle Deviled Eggs. Catch our daily happy hour from 3 to 5 PM, and settle into the 21+ lounge or the four-season patio with it.
