Novo Fogo is an organic drinks company with roots in both Seattle and Brazil, distilling at its own zero-waste distillery in the town of Morretes, in the state of Parana, where the Atlantic rainforest meets the sea. Cachaca is Brazil’s national spirit, made from freshly pressed sugarcane juice rather than molasses, which gives it a fresher, more vegetal character than most rums. Novo Fogo grows its cane without chemicals (it is USDA organic), ferments it, and distills in copper pot stills. That local Seattle tie makes it a fitting pour for a Kirkland neighborhood spot.
