About High West Bourbon

High West was founded in 2006 by David Perkins, a former biochemist who saw the parallels between fermentation in the lab and in the still, and it became Utah’s first legal distillery since 1870. The original distillery opened in Park City as the world’s first ski-in gastro-distillery, at the bottom of a ski run, and the brand later added a larger production site in Wanship. High West built its reputation on the art of blending, and this bourbon is a good example. As the menu notes, High West achieves its balance of flavors by blending high-rye straight bourbons with different mash bills and ages, from two to thirteen years, so the younger whiskey brings brightness and the older whiskey brings depth.
