From Sparrow’s white wine list, the Estival Sauvignon Blanc is a bright, food-loving Washington white that we are glad to pour for the table, and it is $60 by the bottle. It is one of those crisp, expressive whites that suits a long Eastside evening, whether you are settling into the lounge or out on the patio.
About Estival Sauvignon Blanc
Estival is a Washington white wine project from Ste. Michelle Wine Estates, built to celebrate the quality and character of the state’s aromatic whites. The wine comes from the Horse Heaven Hills, a respected sub-AVA of the larger Columbia Valley in eastern Washington. The combination of long sun exposure during the growing season, cool nights, and the moderating presence of the Columbia River gives the area slow, even ripening. That is the key to this style of wine, because it helps the grapes hold on to their natural acidity while still developing real flavor intensity and ripeness. This bottling is a 2024 vintage. A portion of it goes through neutral barrel fermentation and aging, and that gentle, oak-neutral approach is what gives the wine its texture and palate weight rather than any heavy, toasty oak character. The result is a Sauvignon Blanc that tastes vivid and clean but also has genuine body.
Tasting Notes
Expect juicy pineapple, lemongrass, grapefruit, and passion fruit, layered over minerality, salinity, and a lift of lime zest. There is vibrant acidity here along with a lovely, rounded texture, so the wine feels both lively and substantial at the same time. It is the kind of white that wakes up your palate without ever turning sharp or simple, and the gentle barrel work keeps the finish long and satisfying.
What to Pair It With
A zesty Sauvignon Blanc like this loves bright, briny, and herb-driven plates. From the Sparrow dinner menu, try it with Fresh Oysters, the Tuna Tartare, the Wild Alaskan Halibut, or the Spring Arugula Salad. It is also a natural with the Pacific Black Cod and the Roasted Cauliflower Steak, and the wine’s salinity makes it a great match for our Mussels and Sausages.
