Don Fulano Imperial Extra Anejo

From Sparrow’s agave and sotol list, the Don Fulano Imperial Extra Anejo is the crown of the family’s range, a rare, long-aged sipping tequila for special occasions ($48 by the pour, or $72 for a larger pour).

About Don Fulano Imperial Extra Anejo

This is premium highland tequila from the Fonseca and Mendoza family, made from fully mature Blue Weber agave and verified additive free. Coming from a fifth-generation master distiller, this extra anejo is aged a minimum of five years in French and Spanish wine casks, with some portion of the blend up to twelve years old. That long, patient maturation in European oak is what gives it such exceptional smoothness and complexity. The Fonsecas farm their own agave in Atotonilco, Jalisco, and Enrique Fonseca’s European distillation training shows in the precision behind a bottle like this. It is one of the most respected extra anejos a family producer makes.

Tasting Notes

Exceptionally smooth and complex with an enduring finish. The years in French and Spanish wine casks layer in deep, dried-fruit richness and warm baking spice over mature cooked agave, with a long, soft close. This is a tequila to sip slowly and savor, neat or over a single large cube.

What to Pair It With

A pour this special is best enjoyed on its own as a slow sipper, ideally as a nightcap in our 21+ lounge with its quartzite bar. If you would like food alongside, the Sparrow dinner menu offers American Wagyu steaks and the Sparrow-Smoked Rack that can stand up to its richness.
