Don Fulano Anejo

From Sparrow’s agave and sotol list, the Don Fulano Anejo is a refined highland tequila from one of Mexico’s most respected family producers, a true sipping pour ($26 by the pour, or $39 for a larger pour).

About Don Fulano Anejo

Don Fulano was founded by Enrique Fonseca and Sergio Mendoza, whose family has farmed agave in the highlands of Atotonilco, Jalisco for well over a century, with roots that go back around 140 years. They are among the last family-owned tequila producers still self-sufficient in their own agave supply, growing the Blue Weber agave to full maturity before harvest. The anejo (which means aged) is matured in oak to deepen its color and complexity while keeping the elegant, agave-forward style the family is known for. Enrique Fonseca’s time studying distillation in Europe shows up in the precision and polish of everything they bottle, and it is part of why Don Fulano has earned such a loyal following among people who take tequila seriously. The anejo sits at the heart of the lineup, a step up in age and depth from the reposado.

Tasting Notes

An anejo spends longer in the barrel than a reposado, so expect a richer, smoother, more layered pour. Look for warm oak, soft vanilla and baking spice, dried fruit, and a long, gentle finish wrapped around mature cooked agave. This is built for slow sipping, neat or over a single large cube.

What to Pair It With

Sip it on its own, but it also stands up beautifully to bold, savory food. From the Sparrow dinner menu, enjoy it with the Lamb Quesa-Birria Tacos, the Guajillo Chicken, or alongside our American Wagyu steaks. It is a perfect after-dinner pour in the 21+ lounge.
