About Don Abraham Anejo

Don Abraham is an organic tequila produced in Amatitan, Jalisco, in the valley region near the town of Tequila. It is made from 100% organically farmed Blue Weber agave and is certified additive-free, a traditional, single estate approach to the spirit. The anejo is the aged expression in the lineup, rested in oak barrels long enough to earn its anejo (meaning aged) designation, which deepens both color and flavor compared to the blanco and reposado. The organic and additive-free approach means there is nothing added to color or sweeten the spirit, so what reaches the glass comes from the agave and the barrel alone.

Tasting Notes

An anejo tequila in this style is smooth and warming, with extended time in oak bringing notes of vanilla, soft caramel, light wood spice and a mellow, rounded finish over the cooked agave. It is a contemplative, after-dinner kind of pour meant to be enjoyed neat. The aging rounds off any sharp edges, leaving a gentle, sippable character that rewards taking your time with it.

What to Pair It With

Aged agave spirits are best sipped slowly, neat or over a large cube. For food from the Sparrow dinner menu, it stands up nicely to the Lamb Quesa-Birria Tacos, the Guajillo Chicken, or one of our American Wagyu steaks. Our 21+ lounge with its quartzite bar is a great place to settle in with a glass after dinner.
