From Sparrow’s rose list, the Chateau Peyrassol Rose is a classic Cotes de Provence rose and one of the most elegant pink wines we pour, and it is $80 by the bottle. When you want the real benchmark for what dry rose can be, this is the bottle to order.
About Chateau Peyrassol Rose
Peyrassol is one of the historic estates of Provence, with roots going back to the Commanderie de Peyrassol founded by the Knights Templar in 1204, and a recorded wine harvest as early as 1256. After the Templars, the property passed to the Knights of Malta, who maintained the vineyards for centuries, and later to the Rigord family, before being acquired in 2001 by Philippe Austruy, who has continued and modernized its long winemaking tradition. The estate sits on clay-limestone soils with a high proportion of gravel, terroir that is ideally suited to producing fine, pale rose. This bottling is a 2023 vintage, described as an excellent one, and it is an organic blend built mostly on Cinsault and Grenache, the classic grapes of southern France. That long history and careful, organic farming are what put this wine a notch above an everyday pink.
Tasting Notes
This is a light, pale pink rose with an elegant nose. The flavors are delicate yet lively, the hallmark of fine Provence rose, dry and refreshing without ever feeling thin or watery. It is an excellent representation of the southern French style, the sort of wine that is built around finesse and balance rather than bold fruit, and it is made to be sipped slowly on a warm afternoon.
What to Pair It With
Provence rose is endlessly food-friendly. From the Sparrow dinner menu, pour it with Fresh Oysters, the Tuna Tartare, the Burrata Avocado, the Scallops and Prosciutto, or the Spring Arugula Salad. It is a wonderful match for a long lunch on our four-season patio.
