About Bozal Tobasiche Mezcal
Bozal is an artisanal mezcal brand whose name means wild or untamed, a tribute to the wild agave that grows in the remote highlands of Oaxaca, Guerrero, and Durango. This bottling is made from 100% Tobasiche agave, a member of the Karwinskii family that takes many years to fully mature before it is ready to harvest. The hearts of the agave are roasted in earthen pits and crushed by a tahona wheel. Fermentation happens with wild yeasts before the mezcal is double distilled in traditional copper pot stills, an entirely traditional process from field to bottle.
Tasting Notes
The flavor is herbaceous and earthy, with a prominent though not aggressive smokiness. Tobasiche is known for its cedar-like, herbal character and a clean minerality that gives the pour real presence without overwhelming the palate.
