About Bozal Ensamble Mezcal
Bozal is a mezcal brand whose name translates loosely to wild or untamed, a nod to the wild and semi-wild species of Mexican agave that grow in the hard to reach lands of Oaxaca, Guerrero, and Durango. An ensamble is a blend, a mezcal made by joining together more than one type of maguey so the agaves complement each other in the glass. Bozal Ensamble is built around maguey Espadin alongside wild varieties such as Barril and Mexicano. Following long-held tradition, the agave hearts are roasted in earthen pit ovens, then crushed by a stone tahona wheel. Fermentation happens in open air with naturally occurring wild yeast, with no commercial yeast added, before the mezcal is twice distilled.
