About the Dish
Every one of these steaks is Imperial American Wagyu beef, cooked over charbroil and served with mashed potatoes, home-made demi-glace, and chimichurri sauce. The lineup covers a cut for every appetite: a 10 oz center cut striploin, a 16 oz center cut rib eye, a 4 oz center cut tenderloin, a 6 oz Manhattan cut striploin, and an 8 oz center cut tenderloin. On the 8 oz tenderloin you get your choice of the home-made demi-glace and chimichurri. The Wagyu does the talking here, and the char, the demi-glace, and the bright chimichurri round it out. It is a special-occasion plate that still feels right at home in our warm Juanita dining room.
