About Woodinville 9 Year Bourbon
Woodinville Whiskey Co. is a flagship Washington State craft distillery based in Woodinville, just minutes from us here on the Eastside. As the menu explains, this bottling was released to commemorate the distillery’s 15th anniversary, a limited-edition 9 year bourbon that is the oldest whiskey they have made to date. Its mash bill differs from their flagship bourbon, with much higher rye content and less corn. Woodinville grows its grain on the Omlin family farm in Quincy, Washington, distills in Woodinville, and ages across the Cascades in private barrel houses in Central Washington. The barrels are built from wood seasoned outdoors in rain, wind, sun, and snow for 18 months to soften the harsh tannins, then deeply toasted and heavily charred. Central Washington’s hot summers and cold winters push the spirit in and out of the wood as the barrels expand and contract, and nine years of that cycle adds real depth.

The higher rye content here means more spice than a standard bourbon, while nine years in oak builds depth. Expect a richer, more structured profile leaning toward caramel, wood spice, and a long finish. This is a bourbon to take your time with.
