About Woodinville Bourbon
Woodinville Whiskey Co. is a flagship Washington State craft distillery founded in the town of Woodinville, right here on the Eastside. As the menu notes, this flagship bourbon is locally made with proprietary non-GMO corn, rye, and barley. Those staple grains are grown on the Omlin family farm in Quincy, Washington, then mashed and pot-distilled at the Woodinville distillery before being trucked back over the Cascade Mountains to age in private barrel houses in Central Washington. Woodinville seasons its barrel wood in the open air, through rain, wind, sun, and snow, for 18 months to soften the harsh tannins before deeply toasting and heavily charring the barrels. Central Washington’s hot summers and cold winters then push the spirit deep into the wood as the barrels expand and contract, drawing out the rounded, oak-driven character the distillery is known for.
