Stagg

From Sparrow’s bourbon list, Stagg is one of the boldest pours we keep, a barrel proof bourbon from the legendary Buffalo Trace distillery ($17 by the pour, or $25.50 for a larger pour).

About Stagg

Stagg comes from Buffalo Trace in Frankfort, Kentucky, and it is named for George T. Stagg, the Gilded Age distilling figure whose facility eventually became the Buffalo Trace distillery we know today. This is a premium whiskey bottled at barrel proof and left unfiltered to preserve its rich, complex character. Aged 8 to 9 years, it is the kind of cask-strength expression that bourbon lovers seek out. Buffalo Trace is one of the most respected names in American whiskey, and Stagg sits near the top of its lineup, which makes it a standout sip on the Eastside.

Tasting Notes

Stagg leans fruit forward and full bodied, with noted flavors of dark cherry, chocolate, brown sugar, and warm spice. Because it is bottled at barrel proof and unfiltered, every one of those notes arrives concentrated and intense. A few drops of water or a large ice cube will open it up if you prefer to ease into the strength, releasing more of that brown sugar sweetness and softening the spice.

What to Pair It With

This is a serious sipping bourbon, best enjoyed neat or over a single large cube in our 21+ lounge after dinner. It also builds a memorable Old Fashioned or Manhattan. From the Sparrow dinner menu, pair it with the American Wagyu steaks or the Sparrow-Smoked Rack, where its richness has something to lean against.
