From Sparrow’s agave and tequila list, the Solento Anejo is an organic, barrel-aged tequila built for slow sipping, $24 by the pour, or $36 for a larger pour.
About Solento Anejo
This is an organic anejo tequila from the Highlands of Jalisco, aged up to 18 months in used American bourbon barrels. Solento, a blend of the Spanish words for sun and slow, was founded in 2019 by surf filmmaker Taylor Steele and a group of friends who fell for the spirit’s unhurried ritual. It is produced in small batches at a single-estate, family-owned farm and distillery in Jalisco, where the certified organic blue agave is hand-harvested. The agave is hand-harvested in small batches, and the producing family has worked the craft across three generations. An anejo, by definition, is aged at least a year in oak, which is what gives Solento its deeper color and mellow, layered character. The whole project is built around the idea of slowing down, which is exactly how this tequila is best enjoyed.
Tasting Notes
Expect buttery maple notes with a touch of toasted hazelnuts that is not overwhelming and still provides a largely clean finish. The bourbon-barrel aging lends warmth and a smooth, rounded body without burying the agave.
What to Pair It With
An anejo this smooth is best enjoyed slowly. From the Sparrow dinner menu, sip it after the American Wagyu steaks or the Sparrow-Smoked Rack, or alongside the Lamb Quesa-Birria Tacos. It is a perfect neat or large-cube pour to close out the evening in our 21+ lounge.
