From Sparrow’s agave and tequila list, Patron Silver is the bright, unaged blanco that started many a tequila journey, and it is $20 by the pour, or $30 for a larger pour.
About Patron Silver
Patron is made at Hacienda del Patron in the Highlands of Jalisco, near the town of Atotonilco el Alto, where cooler temperatures, higher rainfall, and iron oxide rich red soil give the blue agave a high sugar content. The distillery is known for its hands-on, traditional approach, blending tequila milled two ways, by modern roller mill and by the old stone tahona wheel, then double distilling in copper pot stills before the two are combined. As a Silver (blanco), it is bottled clear and unaged, so the pure character of the cooked agave comes through. The hacienda sits at altitude where the agave benefits from cooler nights and abundant mineral-rich water drawn from deep wells, and the house philosophy is famously about replication rather than automation. Everything is handcrafted right through to bottling, where every bottle is hand-corked, hand-labeled, and hand-wrapped, with dozens of hands touching it before it ships.
Tasting Notes
A good blanco tequila like this is clean and crisp, with bright cooked-agave sweetness, soft citrus, and a touch of pepper. It is smooth enough to sip and lively enough to anchor a great Margarita.
What to Pair It With
Tequila loves bright, spiced, citrus-forward food. From the Sparrow dinner menu, pour it alongside the Lamb Quesa-Birria Tacos, the Guajillo Chicken, or the Tuna Tartare, or enjoy it in a Margarita or our Juanita-Rita. It is a natural during our daily happy hour from 3 to 5 PM, and a favorite in the 21+ lounge.
