About Santaleza Blanco

This is a Highland tequila produced using traditional methods. The blue Weber agave is aged 7 to 8 years in mineral-rich red soil before being harvested, slow roasted, and crushed with a 135-year-old tahona wheel. Santaleza is made by the Lopez-Villareal family in the Highlands of Jalisco (Los Altos), and the family tahona, passed down through generations, does the milling before the crushed agave ferments in local oak vats with mountain spring water drawn straight from the distillery grounds, in an all-natural, open-air process. The spirit is then twice distilled in copper stills and rested only until the flavor is right. Santaleza is made without additives or diffusers, the shortcuts that strip many big-brand tequilas of character. As a blanco, it is bottled clear and unaged so the agave speaks for itself, and the long time the plants spend in that mineral-rich red soil is exactly what gives it depth.

Tasting Notes

Expect citrus and agave aromas, with a dry, clean finish. The tahona milling gives it a soft, mineral edge, and the result is bright and refreshing without any harshness.

What to Pair It With

A clean Highland blanco is made for bright, citrusy plates. From the Sparrow dinner menu, enjoy it with the Lamb Quesa-Birria Tacos, the Guajillo Chicken, or the Tuna Tartare, or shaken into a Margarita. At $12 by the pour it is a happy hour friendly sipper, and our daily happy hour runs 3 to 5 PM.
