Ocho Plata

From Sparrow’s agave and tequila list, the Ocho Plata is a single-estate, unaged blanco for anyone who wants to taste the agave itself ($14 by the pour, or $21 for a larger pour).

About Ocho Plata

Tequila Ocho is the project of master distiller Carlos Camarena, a multi-generation agave farmer and tequilero from the Camarena family in Los Altos, Jalisco, working with the late Tomas Estes, a longtime restaurateur and tequila ambassador. Together they set out to prove that terroir exists in tequila, the way it does in wine. Ocho was the first tequila to put both the year and the specific single estate, or rancho, on the bottle, so each release reflects one field of agave. The Plata is the unaged expression, made from fully mature blue agave grown in the red clay soil of Los Altos, slow-cooked in traditional ovens and distilled with no additives. It is tequila in its purest, most transparent form.

Tasting Notes

An unaged blanco like this puts the agave on full display. Expect a clean, vibrant pour with cooked and green agave, citrus and a peppery snap, plus the bright minerality that the highland soil is known for. There is no oak to hide behind, just crisp, honest agave character with a fresh finish.

What to Pair It With

A crisp blanco is fantastic with bright, zesty plates from the Sparrow dinner menu, from the Tuna Tartare to the Lamb Quesa-Birria Tacos or the Fresh Oysters. Sip it neat to appreciate the single-estate character, or let it anchor a clean Margarita or our Juanita-Rita.
