From Sparrow’s agave and tequila list, the Ocho Reposado is estate-grown agave from a partnership between a restaurateur and a fifth-generation agave farmer and tequilero ($17 by the pour, or $25.50 for a larger pour).
About Ocho Reposado
Tequila Ocho was created by Carlos Camarena, a multi-generation agave farmer and tequilero from the Camarena family in Los Altos, Jalisco, together with the late Tomas Estes, a longtime restaurateur and tequila ambassador. Their goal was to show that tequila, like wine, carries the terroir of where the agave grows. Ocho was the first brand to print both the production year and the specific single estate, or rancho, on the label, so each batch tells the story of one field. The Reposado takes that same single-estate agave and rests it in oak, adding a layer of warmth and roundness while keeping the highland agave character intact. It is made traditionally, with no additives.
Tasting Notes
A reposado bridges the crispness of a blanco and the depth of an aged tequila. Look for cooked agave and citrus brightness joined by gentle vanilla, soft baking spice and a touch of oak from the barrel rest, with the clean, mineral lift of Los Altos behind it. The finish is smooth and lingering.
What to Pair It With
Its rounded, lightly oaked profile is a great match for the bold plates on the Sparrow dinner menu, such as the Guajillo Chicken, the Lamb Quesa-Birria Tacos or the Tuna Tartare. Sip it neat to enjoy the single-estate detail, or build it into a Margarita or the Juanita-Rita in our 21+ lounge.
