The bubbles come from Mionetto, the famous Prosecco house founded in 1887 in Valdobbiadene, in the heart of Italy’s Prosecco region; their alcohol-removed sparkling starts as real wine from indigenous Italian grapes before the alcohol is gently removed. We finish it with soda over ice and a garnish, just like the original. It is a craft pour, not an afterthought, and it lands beautifully on the four-season, dog-friendly patio or at weekend brunch (10 AM to 2 PM).
