About Koch Tobasiche Mezcal

Koch El Mezcal de Oaxaca was founded when Carlos Moreno revived his family’s mezcal heritage in 2009 alongside maestro mezcalero Pedro Hernandez, working with a broad collective of producing families in Oaxaca. This bottling is made from Tobasiche agave that is harvested after twelve full years of growth. The agave is cooked in underground conical ovens, then the roasted pinas are shredded using a traditional tahona wheel, fermented in wood with native yeasts, and finally double distilled in traditional copper pot stills. It is a textbook example of the slow, hands-on process behind real Oaxacan mezcal.
