About Koch Tepeztate

Koch El Mezcal de Oaxaca traces its roots to a family that has been linked to mezcal since the early 20th century. In 2009 Carlos Moreno revived the family tradition and partnered with maestro mezcalero Pedro Hernandez, and today Koch works alongside many producing families and communities across Oaxaca. This bottling is made entirely from Tepeztate, a wild variety of agave that can take many years to reach full maturity, which is part of why it is so prized. The long, patient growing cycle concentrates the plant before it is roasted, crushed, fermented, and distilled using traditional methods, with a focus on sustainability that runs through everything Koch makes.

Tasting Notes

Per the menu, the slow maturation produces a complex mezcal with noted floral and herb flavors. There is a mild smokiness and a slightly sweet finish that makes it surprisingly approachable for such a characterful agave. Sip it neat and let it open up.

What to Pair It With

Mezcal loves bright, savory food. From the Sparrow dinner menu, try it with the Lamb Quesa-Birria Tacos, the Guajillo Chicken, or the Tuna Tartare, or simply sip it neat in our 21+ lounge. The daily happy hour runs 3 to 5 PM if you want to settle in early.
