George Dickel is made at the Cascade Hollow Distillery in Tullahoma, Tennessee, one of the oldest continuously operating whisky distilleries in the state. This bottled-in-bond expression is aged 13 years and bottled at 100 proof, built on a mash bill of 84% corn, 8% rye, and 8% malted barley. As a Tennessee whiskey, it goes through the Lincoln County Process, where the spirit is mellowed through sugar maple charcoal before barrel aging, a step that lends Tennessee whiskey its signature smoothness. Dickel is known for chilling its whiskey before that charcoal mellowing, a small distinction the distillery credits for an especially rounded character.
