From Sparrow’s vermouth list, Foro Dry Vermouth is a crisp, aromatic Italian aperitivo that is lovely before dinner ($9 by the pour, or $13.50 for a larger pour).
About Foro Dry Vermouth
Foro comes from the Piemonte region of Italy and is made in adherence to the strict standards of Vermouth di Torino, the historic home of Italian vermouth. The base is organic Trebbiano grapes, flavored primarily by Roman wormwood. From there it picks up a layered botanical mix that is known to include lemon peel, rosehip, thyme, aloe vera, gentian, Chinese tree bark, and St. John’s Wort. The result is a dry vermouth in the classic Torino tradition.
Tasting Notes
Expect a dry, delicate, and exceptionally fragrant pour, with the bright lift of lemon peel and herbs over a clean, wine-driven base. The wormwood gives it a gentle bitter backbone that keeps it fresh and appetite-whetting rather than heavy, with a clean, dry finish that resets the palate between bites.
What to Pair It With
Dry vermouth is the original aperitivo, made to open a meal. Sip it chilled on its own or with soda before you order, or carry it into a martini in our 21+ lounge. It is a natural with lighter shareables from the Sparrow menu, like the Fresh Oysters, Tuna Tartare, or Burrata Avocado. Our daily happy hour runs 3 to 5 PM if you want to start early.
