Cava is Spain’s traditional-method sparkling wine, made the same way as Champagne with a second fermentation that happens right in the bottle, which is what gives it those fine, persistent bubbles. Most Cava comes from the Penedes region of Catalonia in northeastern Spain, and it is built primarily on the local white grapes Macabeo, Xarello, and Parellada. Flama D’Or is produced by Castell d’Or, a Catalan group built on a cooperative of grape-growing families with deep roots in the region. That cooperative model lets growers pool generations of vineyard knowledge, and it is part of why this Cava delivers genuine character at such an honest price.
