Don Fulano Reposado

From Sparrow’s agave and sotol list, the Don Fulano Reposado is a delicate, refined highland tequila from a family with deep agave roots ($19 by the pour, or $28.50 for a larger pour).

About Don Fulano Reposado

Don Fulano comes from a fifth-generation agave farmer whose family roots go back 140 years in the highlands of Atotonilco, Jalisco. Hand-selected fully mature agave is fermented with native yeasts and brought to proof with volcanic spring water, then aged for 8 to 11 months in French wine barrels. That French oak influence, rather than the more common bourbon barrel, is part of what gives Don Fulano its distinctive, wine-like elegance. The Fonseca and Mendoza family grows its own agave and remains one of the last fully self-sufficient family producers in tequila, a rarity in a category where most brands buy their agave on the open market.

Tasting Notes

Delicate and refined, with notes of spice, vanilla, dried fruit, and buttery accents. The short rest in French wine barrels softens the agave without overwhelming it, leaving a smooth, layered pour that drinks beautifully neat or in an elevated cocktail.

What to Pair It With

This reposado loves savory, spiced food. From the Sparrow dinner menu, pair it with the Lamb Quesa-Birria Tacos, the Guajillo Chicken, or the Tuna Tartare. It also makes a refined Margarita or our Juanita-Rita, and the daily happy hour from 3 to 5 PM takes $3 off well drinks.
