From Sparrow’s agave and sotol list, the Don Fulano Blanco is a bright, estate-grown highland tequila that shows pure agave character ($16 by the pour, or $24 for a larger pour).
About Don Fulano Blanco
Don Fulano comes from the Fonseca and Mendoza family, fifth-generation agave growers in the highlands of Atotonilco, Jalisco. Their estate-grown Blue Weber agave is allowed to reach full maturity before harvest, which is what gives these tequilas such depth. The blanco is distilled using a combination of pot and column stills, a thoughtful approach that balances bold character with refinement. As an unaged expression, it shows the agave at its most honest and direct, with no barrel to hide behind. The family grows its own agave and remains one of the last fully self-sufficient producers in tequila, which is a big part of why their blanco tastes so true to the plant.
Tasting Notes
Elegant and bright, with notes of citrus and white pepper over clean, cooked agave. The pot-still character adds texture while the column-still side keeps it crisp and refined. It is lively neat and makes an exceptional Margarita where the agave really shines through.
What to Pair It With
A blanco’s brightness loves fresh, zesty food. From the Sparrow dinner menu, pair it with the Tuna Tartare, the Lamb Quesa-Birria Tacos, or the Guajillo Chicken. It is also the heart of a great Margarita or our Juanita-Rita, and the daily happy hour from 3 to 5 PM takes $3 off well drinks.
