From Sparrow’s rum list, Denizen is an aged white rum built for cocktails, a smooth, characterful pour that makes one of the best Daiquiris you will find ($10 by the pour, or $15 for a larger pour).
About Denizen
Denizen is a blended white rum with real Jamaican character, aged about three years. It was created with the classic daiquiri in mind, blending charcoal-filtered Caribbean rum with rich, funky pot-still Jamaican rum so the spirit keeps the clarity of a white rum while carrying more depth and personality than most. The aging in American oak bourbon barrels smooths it out and adds a little roundness, then the color is filtered back to near-clear. The idea was to recreate the kind of layered, flavorful rum that made the cocktails of mid-century Havana so good.
Tasting Notes
Denizen drinks cleaner than a dark rum but with more going on than a standard white. Expect a gentle sweetness, soft vanilla and oak from the barrel time, and a hint of the tropical, slightly funky fruit that Jamaican pot-still rum is known for. It is smooth, dry on the finish, and made to mix, which is exactly why bartenders reach for it.
What to Pair It With
This is a mixing rum through and through. It shines in a Daiquiri, a Mojito, or any bright, citrusy cocktail, and it pairs naturally with fresh, briny starters from the Sparrow dinner menu like Fresh Oysters or the Tuna Tartare. Stop by during our daily happy hour, 3 to 5 PM, for $3 off well drinks.
