From Sparrow’s liqueur list, Green Chartreuse is one of the most storied bottles we pour, a legendary French herbal liqueur with centuries of history behind it ($23 by the pour, or $34.50 for a larger pour).
About Chartreuse (Green)
Chartreuse is made by Carthusian monks and named for their Grande Chartreuse monastery in the Chartreuse Mountains north of Grenoble, France. The order has produced the liqueur since 1737, working from an ancient manuscript, and the full recipe is famously known only to a small handful of monks at any time. It is built from distilled spirit aged with a long list of herbs, plants, and flowers, and the green version takes its natural color and bracing, peppery intensity straight from those botanicals rather than any added coloring. Production has moved over the years, from Fourvoirie to Voiron and on to nearby Aiguenoire, but the monastic hand behind it has never changed. There is genuinely nothing else like it on a back bar, which is why it has such a devoted following.
Tasting Notes
Green Chartreuse is intense and herbal in the best way, layered with mint, spice, and a wave of green botanicals that build into a long, warming finish. It is bold and unmistakable, the kind of pour that rewards slow sipping.
What to Pair It With
This is a classic digestif. Sip it neat or over a single large cube after dinner in our 21+ lounge, or let our bartenders build it into a cocktail. It also pairs beautifully with a strong espresso, and it is a worthy close to a meal from the Sparrow menu.
