From Sparrow’s amaro list, Brucato Woodlands is a New World amaro that incorporates over 30 different botanicals, many drawn from the woodlands of California ($9 by the pour, or $13.50 for a larger pour).
About Brucato Woodlands
Brucato is a small San Francisco amaro producer founded by Sierra and James Clark, who craft Italian-style amari from California botanicals and produce. The brand is named for John Brucato, who founded the San Francisco Farmers Market in 1943, and each amaro reflects a specific California landscape. Woodlands is their darkest, most forest-inspired expression, built on over 30 botanicals including elderberry, black fig, cocoa nibs, and citrus. The character is meant to evoke California’s redwood forests and shaded woodlands, a deeper and more brooding counterpoint to the brighter Chaparral and fruit-forward Orchards.
Tasting Notes
Woodlands is rich and layered, with dark berries and fig up front, subtle cocoa tones running through the middle, a thread of citrus for lift, and a noted woodsy bitterness on the finish. It is the most after-dinner of the Brucato trio, deep and warming without being heavy.
What to Pair It With
This dark, woodsy style is a classic digestivo. Sip it neat or over a large cube after dinner, especially alongside an espresso or after a meal of American Wagyu steak or the Sparrow-Smoked Rack from the Sparrow menu. It makes a fine nightcap in our 21+ lounge, and our daily happy hour from 3 to 5 PM is an easy time to try it.
