Braulio Amaro

From Sparrow’s amaro list, Braulio is a classic alpine Italian amaro, oak aged and built around a secret blend of mountain botanicals ($12 by the pour, or $18 for a larger pour).

About Braulio Amaro

Braulio was founded in 1875 by Francesco Peloni, the son of a pharmacist and chemist, in Bormio high in the Valtellina region of the Italian Alps. This oak-aged amaro is built on a closely guarded recipe of alpine herbs, roots, and berries, of which only four are publicly known: gentian, yarrow, juniper, and wormwood. After maceration, the amaro spends an extended period aging in oak, which rounds out its bitterness and adds depth. The mountain setting is part of the story, as the same crisp, herbal alpine character that defines the region comes through clearly in the glass.

Tasting Notes

Braulio is deeply aromatic and herb-forward, with the bracing alpine bitterness of gentian and wormwood balanced by woody juniper and a clean, almost minty lift. The oak aging softens the edges and brings a warming, slightly resinous depth that makes it a wonderful after-dinner sipper.

What to Pair It With

Alpine amari like Braulio shine as a digestivo. Sip it neat after dinner, ideally alongside an espresso, or enjoy it as a thoughtful close to a meal of American Wagyu steak or the Sparrow-Smoked Rack from the Sparrow menu. It is right at home as a nightcap in our 21+ lounge. Our daily happy hour runs from 3 to 5 PM if you would rather start the evening early.
