About Barrel Sea Grass Rye
This comes from Barrell Craft Spirits, the Louisville independent blender known for sourcing aged whiskeys and finishing them in unexpected casks. Sea Grass is built from Canadian rye blended with Kentucky and Tennessee whiskey, then aged in a trio of finishing casks: apricot brandy, Martinique Rhum, and Madeira. Each component is sourced and finished separately before blending, which lets every cask add its own layer to the final whiskey. It is a great example of how creative finishing can transform a classic rye.
Tasting Notes
The three finishing casks push this rye toward tropical and orchard fruit, with ripe apricot from the brandy barrels and a touch of Madeira richness. Underneath, the rye keeps its grassy, spicy character, with notes of cinnamon and herbs. It is juicy and layered, bright fruit over classic rye spice.
What to Pair It With
Sip it neat or over a large cube to let the fruit-forward finishes show, or use it to give a Manhattan an unexpected twist. From the Sparrow dinner menu, it pairs nicely with our American Wagyu steaks or the Sparrow-Smoked Rack. It is a fun after-dinner pour in our 21+ lounge.
