About Barrel Bourbon

Barrell Craft Spirits is a Louisville-based independent blender and bottler, celebrated for sourcing aged whiskeys and marrying them into cask-strength batches that highlight the art of blending. This is a limited-release blend of bourbons with a minimum of six years of age, bottled at 114 proof. Barrell does not chill filter or cut these batches down, so what you get in the glass is full-strength, full-flavor bourbon exactly as it came together in the blend. Each batch is its own expression, which is part of the fun of pouring a Barrell release.

Tasting Notes

At 114 proof this is a robust, full-bodied bourbon. Cask-strength blends like this tend to layer caramel and oak with warm baking spice and a long, generous finish. There is real depth and richness here, the kind of bourbon that rewards slow sipping. A splash of water or a large cube opens it up nicely if you prefer to soften the proof.

What to Pair It With

This is a sipping bourbon, excellent neat, over a large cube, or in a bold Old Fashioned. From the Sparrow dinner menu, it pairs well with our American Wagyu steaks, the Sparrow-Smoked Rack, or the Truffle Deviled Eggs. It is a great after-dinner pour in our 21+ lounge at the quartzite bar, and our daily happy hour runs 3 to 5 PM.
