From Sparrow’s brandy list, the Bache VS is a soft, lively Cognac with a great story behind it, and an easy choice whether you are sipping or mixing ($10 by the pour, or $15 for a larger pour).
About Bache VS Cognac
This is a French Cognac founded in 1905 by Norwegian immigrants. The house was established by Thomas Bache-Gabrielsen, a young Norwegian who traveled to the town of Cognac and built a family business that is still run by his descendants today. Originally the bottle carried three stars, but the name was changed to Tre Kors, meaning three crosses in Norwegian, to get around prohibition laws and to signify the medicinal properties of the spirit. During the Norwegian prohibition era it was frequently used to treat the Spanish flu in the early 1900s, when liquor was sold for medicinal use. Aged a minimum of 2 years, this young Cognac is soft yet lively, and it is just as good as a stand-alone pour as it is in cocktails.
Tasting Notes
As the menu notes, this young Cognac is soft yet lively. It leans bright and approachable, with the fresh fruit character of a VS Cognac balanced by light, rounded warmth from its time in oak, an easy-drinking style that mixes well.
What to Pair It With
The Bache VS is versatile, equally happy neat, on a large cube, or as the backbone of a cocktail. From the Sparrow dinner menu, enjoy it after a plate of American Wagyu steak or with the Truffle Deviled Eggs. It is also a great value pour during our daily happy hour from 3 to 5 PM in the 21+ lounge.
