About Willet Bourbon

Willett is a family distillery in Bardstown, Kentucky, founded by Thompson Willett in 1936 on the family farm and revived by the family in 2012 with distilling once again on the original estate. This expression is a 94 proof blend of 8 to 10 year Kentucky bourbon. Its mash bill is 65% corn, 20% wheat, and 15% malted barley, which makes it a wheated bourbon, the wheat standing in for the rye you find in many bourbons and giving the whiskey a softer, gentler profile.

Tasting Notes

A wheated mash bill like this one tends toward smooth and mellow, with the wheat softening the grain so the caramel, vanilla, and oak from eight to ten years of aging come through gently. At 94 proof it has enough structure to sip slowly while staying easy and rounded.

What to Pair It With

This wheated bourbon is lovely neat or over one large cube, and it makes a smooth, gentle Old Fashioned. From the Sparrow dinner menu, enjoy it with the American Wagyu steaks or the Truffle Deviled Eggs in our 21+ lounge.
