From Sparrow’s Scotch list, Talisker is a bold, sea-driven single malt from the Isle of Skye ($22 by the pour, or $33 for a larger pour).
About Talisker
Talisker is an island single malt Scotch whisky distillery in the village of Carbost on the Isle of Skye, founded back in 1830 by brothers Hugh and Kenneth MacAskill. It is the oldest working distillery on Skye, and its whisky is shaped as much by its rugged coastal home as by the spirit itself. The soft, peaty process water is drawn from underground springs beside the distillery, the same source that has fed Talisker from the very beginning. Today it is part of Diageo’s Classic Malts family and one of the most recognizable maritime malts in Scotland.
Tasting Notes
Talisker is famous for its bold, maritime character. The house style is smoky and peppery, unmistakably shaped by the sea, with pronounced notes of sea salt, gentle smoke, and a signature black-pepper kick on the finish. It is a robust, warming Scotch for someone who likes their whisky with real presence.
What to Pair It With
This is a sipping Scotch best served neat or over a single large cube. From the Sparrow dinner menu, its sea-salt and smoke play beautifully with fresh oysters, the Pacific Black Cod, or the American Wagyu steaks. It is a satisfying after-dinner pour in our 21+ lounge, and our daily happy hour from 3 to 5 PM is a good time to settle in with one.
