About Hidalgo Fino Sherry

This Fino comes from Bodegas Hidalgo, a historic, family-run sherry house with roots in the Jerez region of southern Spain, founded in 1874. It is crafted from Palomino grapes, the classic white grape of the sherry country, and aged for six to seven years, notably longer than most other Fino sherries. Fino is made under a protective layer of yeast called flor and aged in the traditional solera system, which is what gives it its signature dry, savory character.

Tasting Notes

The extra aging adds to its elegance, complexity, and long finish. Expect a bone-dry, crisp pour with bright, nutty, and saline notes, the hallmark of a well-made Fino. It is light on its feet but seriously layered, with a savory depth that comes from years under flor.

What to Pair It With

Chilled Fino is one of the great food wines, a classic match for salty and savory bites. Pour it before dinner or alongside dishes from the Sparrow menu like the Fresh Oysters, Tuna Tartare, or Scallops and Prosciutto. It is a refined way to start the evening in our 21+ lounge or out on the patio.
