Aperol

From Sparrow’s amaro and aperitivo list, Aperol is the bright orange Italian classic that defined the aperitivo hour ($11 by the pour, or $16.50 for a larger pour).

About Aperol

Aperol was created in 1919 by the Barbieri brothers, Luigi and Silvio, in Padua, Italy, and was first shown at the Padua International Fair that same year. Its name comes from apero, a slang word for aperitif, and that is exactly what it was built to be, a light, low-proof bitter to open the appetite before a meal. Aperol is made by infusing bitter and sweet oranges with rhubarb, gentian, and a blend of herbs and roots, which gives it that signature glowing orange color. It is now part of the Campari Group and is the heart of the Aperol Spritz, the drink that carried Italian aperitivo culture around the world.

Tasting Notes

Aperol is gently bitter and on the sweeter side, with vivid notes of bitter orange, rhubarb, and a soft herbal backbone. It is lighter and more approachable than many amari, refreshing rather than heavy, which is what makes it such an easy pour before dinner.

What to Pair It With

Aperol is an aperitivo through and through, made to wake up the palate. Enjoy it as a spritz with prosecco and soda, or sip it over ice with bright starters from the Sparrow menu like the Burrata Avocado, the Tuna Tartare, or Fresh Oysters. It is a favorite on our four-season patio, and our daily happy hour from 3 to 5 PM is the perfect time to ease into the evening with one.
