About 8 Reserve
8 Reserve is an anejo-style tequila made in Jalisco, Mexico from 100% blue Weber agave, the same heart-of-the-plant that defines all true tequila. Anejo tequilas are matured in oak barrels, which is what gives this category its deeper color and richer, more layered character compared with a blanco or reposado. It is a top-shelf bottle in our lineup, the kind of pour you order when you want to take your time with it. By law, all tequila must come from designated regions of Mexico centered on Jalisco, and anejo means the spirit has spent at least a year in oak before bottling, which is why this style carries more depth than a younger pour.
Tasting Notes
Time in oak rounds out the agave and adds warmth. Aged tequilas in this style tend to show cooked agave wrapped in vanilla, soft baking spice, and a touch of toasted oak, with a smooth, lingering finish. It is a sipper first and foremost, rewarding a relaxed pace. Pour a little water or let it open in the glass and the sweeter, more delicate notes come forward.
What to Pair It With
An aged tequila like this is best enjoyed neat or over a single large cube so the flavors open up. From the Sparrow dinner menu, it stands up beautifully to the American Wagyu steaks, the Sparrow-Smoked Rack, or the Lamb Quesa-Birria Tacos. It is a natural after-dinner pour in our 21+ lounge with the quartzite bar.
