About Cascadia Bitter

Produced in Oregon by New Deal Distillery in Portland, Cascadia mimics the style and technique of classic European amari but uses botanicals from the Pacific Northwest. Rose petals, lavender, gentian root, angelica, and other botanicals create a unique floral, bittersweet flavor profile. It is a thoughtful regional interpretation of the amaro tradition, inspired by the flora of the Cascade Mountain range that gives the bottle its name, and a natural fit for a Kirkland menu that likes to keep things close to home on the Eastside. New Deal has been a fixture of the Portland craft-distilling scene since the mid-2000s, and this floral, botanical-forward bitter is one of its signature bottles, made by distilling whole dried botanicals and finishing with a maceration of gentian and angelica root.

Tasting Notes

Cascadia is floral and aromatic before it is bitter, leading with rose petal and lavender and finishing with the dry, earthy bitterness of gentian and angelica root. It is layered and a little wild, distinctly Northwest in character, balancing bitter, floral, and herbal notes in one glass.
